White powder, melting point 622 ℃, soluble in water, has significant chelating ability to calcium and magnesium and other metal ions, can soften hard water, make suspension into solution, weak alkaline, non corrosive, is an inorganic surfactant, has strong emulsifying effect on lubricating oil and fat, bulk density is generally divided into low density 0.35-0.5g/cm3, medium density 0.51-0.65g/cm3, high density 0.66-0.9g/cm3; Pentasodium has two crystalline forms: type I (high temperature type) and type II (low temperature type). Their chemical properties are the same. The difference is that the thermal stability and hygroscopicity of type I are higher than that of type II. At the same time, their solubility and hydration heat during dissolution are different. It is hydrolyzed gradually in water to form orthophosphate, which has good ability to complex metal ions. It can complexate with calcium, magnesium, iron and other metal ions, and has certain properties of organic surfactant.
In the food industry, it is used for the quality improver of canned ham, juice beverage, dairy products, soybean milk, etc. it is mainly used for the tenderization of canned ham and the softening of soybean skin in canned broad bean. It can also be used as softener and thickener.
